 Strawberry Pretzel Salad Ingredients Topping 2 packages (4-serving size each) Jell-O® strawberry-flavored gelatin 2 cups boiling water 2 boxes (16 oz each) frozen sweetened strawberries, thawed Crust 2 cups pretzels, crushed 3/4 cup butter, melted 3 tablespoons sugar Filling 1 container (8 oz) Cool Whip frozen whipped topping, thawed 1 package (8 oz) cream cheese, softened 1 cup sugar

Greek Quinoa Salad

Greek Quinoa Salad 1 C baby kale 1/2 C cherry tomatoes 1/2 C Cucumbers chopped 1 Tbs fresh parsley chopped 1/4 C red onion Kalamata olives 1 C cooked quinoa or 1 can lentils 2 Tbs lemon juice 1/8 tsp pepper 1/8 tsp salt 2 Tbs olive oil feta cheese 2 C water

Garlic Dressing

Garlic Dressing  By Jenelle Yim 3/4 cup apple or Japanese rice vinegar 2 1/2 C sugar 1 1/2 tsp salt 2-3 Tbs sesame oil 5 cloves garlic 1 1/2 C mayo 3 Tbs mirin  Combine all ingredients in a blender and blend well.  

Baked Crab Salad

 Baked Crab Salad By Karen Chun 2 lg. potatoes, boiled and diced 1/4 lb. fresh cooked shrimp 1 can crab meat 1 1/2 C mayonaise 1 T Worcestershire sauce 1 T grated round onion salt and pepper to taste Heat oven to 350*  Mix all ingredients, place in casserole dish.  Combine 1/4 C cracker crumbs and 1 Tbs butter; sprinkle on salad. Bake 15-20 min. Serve hot.  

Asian Cucumber Pickles

 Asian Cucumber Pickles 4 Cups of very thinly sliced seedless cucumbers (I used mini cucumbers) 1/4 C of finely sliced red onion 1/4 C finely sliced red onion 1/4 C of finely diced red pepper 1/4 C rice wine vinegar 1 tsp of honey 1 tsp of sesame seeds 1/2 tsp toasted sesame oil 1/4 tsp of red chili pepper flakes  1/4 tsp of sea salt Instructions 1 Add very thinly sliced cucumber, sliced red onion, diced red pepper, and sesame seeds to a medium size bowl.  Set aside. 2 In a small bowl, mix together rice wine vinegar, honey, toasted sesame oil, red pepper flakes, and sea salt.   3 Add dressing to the cucumber bowl.  Toss to mix everything. 4 Serve immediately or cover and let sit in the refrigerator for an hour or two to let all the flavors meld.  

Chinese Chicken Salad

Chinese Chicken Salad By Karen Nagata  1/2 C Salad Oil or less 1 Tbs Sesame Oil 1/2 C Sugar 1/3 C Rice vinegar 1 clove minced garlic 1 Tbs minced ginger  1/4 C minced onion 2 tsp salt 1 tsp pepper 1 tsp dry mustard 1/2 T Mayo 2 T Soy Lettuce of choice cilantro carrot won ton chips shredded chicken tomatoes Put all ingredients in food processor or blender and combine thoroughly until smooth.
